- Cut the cucumbers in half longways and use a spoon to carve out the middle of each one.
- Chop the green onions and chives.
- Mix the yogurt, dijon mustard, tahini, chopped green onion, chopped chives, capers, and lemon juice together in a bowl.
- Add the yogurt mixture to the center of each cucumber.
- Top off each cucumber with a piece of smoked salmon.
- Sprinkle on sunflower seeds, then squeeze on more lemon juice and top with fresh dill as desired.

Substitutions, Add-Ons, & Alterations:
- Use regular cucumbers or english cucumber and cut them into small pieces for ease.
- Try greek yogurt (may contain dairy) for a protein boost!
- Substitute green onion for pickled or fresh red onion.
- Add pepitas, sesame seeds (contains sesame), or other nuts (may contain tree nuts or peanuts) or seeds in place of sunflower seeds.
- Replace capers with chopped pickles.
- Instead of lemon juice use lime juice.
