Smoked Salmon Cucumber Boats

These Smoked Salmon Cucumber Boats take less than 10 ingredients to make and come together in less than 10 minutes! Grab the ingredients next time you're at the store for a quick, but tasty bite to eat.

Ingredients
  

  • 4 mini cucumbers
  • smoked salmon
  • 1/4 cup plain, unsweetened yogurt df
  • 1 tbsp dijon mustard
  • 1 tbsp tahini
  • 1/4 cup green onion chopped
  • 1/4 cup chives chopped
  • 1/4 cup capers chopped
  • sunflower seeds
  • fresh lemon juice
  • fresh dill chopped, as desired

Equipment

  • 1 small dish/bowl
  • 1 spoon
  • 1 chef's knife
  • 1 cutting board
  • measuring cups
  • measuring spoons

Preparation
 

  1. Cut the cucumbers in half longways and use a spoon to carve out the middle of each one.
  2. Chop the green onions and chives.
  3. Mix the yogurt, dijon mustard, tahini, chopped green onion, chopped chives, capers, and lemon juice together in a bowl.
  4. Add the yogurt mixture to the center of each cucumber.
  5. Top off each cucumber with a piece of smoked salmon.
  6. Sprinkle on sunflower seeds, then squeeze on more lemon juice and top with fresh dill as desired.

Notes

Substitutions, Add-Ons, & Alterations:
  • Use regular cucumbers or english cucumber and cut them into small pieces for ease.
  • Try greek yogurt (may contain dairy) for a protein boost!
  • Substitute green onion for pickled or fresh red onion.
  • Add pepitas, sesame seeds (contains sesame), or other nuts (may contain tree nuts or peanuts) or seeds in place of sunflower seeds.
  • Replace capers with chopped pickles. 
  • Instead of lemon juice use lime juice.
