- Prepare and cook chicken as desired.
- On a skillet/fry pan on the stove, over low-medium heat, spray oil and add a tortilla. Heat on both sides until crisp.
- Wash and slice tomatoes, cucumber, and green onion.
- Add some mustard on each tortilla and smear evenly on top.
- Add diced, cooked chicken on top, then sliced cucumber, kalamata olives, and green onion.
- Add a bit of microgreens, squeeze on fresh lemon, and drizzle on tahini.

- Substitute green onion for red onion or pickled red onion.
