Greek Tostadas

Quick, easy, and tasty…what more could you ask for? These Greek Tostadas are the perfect, healthy lunch or dinner whether you're in a rush or just looking for something quick and delicious.

Ingredients
  

  • cooked chicken breast diced
  • tortillas gf
  • cherry or grape tomatoes halved
  • mini cucumber sliced
  • kalamata olives sliced, pitted
  • green onion chopped
  • microgreens
  • tahini
  • mustard
  • fresh lemon juice
  • oil spray

Equipment

  • 1 fry pan
  • 1 knife
  • paper towels

Preparation
 

  1. Prepare and cook chicken as desired.
  2. On a skillet/fry pan on the stove, over low-medium heat, spray oil and add a tortilla. Heat on both sides until crisp.
  3. Wash and slice tomatoes, cucumber, and green onion.
  4. Add some mustard on each tortilla and smear evenly on top.
  5. Add diced, cooked chicken on top, then sliced cucumber, kalamata olives, and green onion.
  6. Add a bit of microgreens, squeeze on fresh lemon, and drizzle on tahini.

Substitutions, Add-Ons, & Alterations:
  • Substitute green onion for red onion or pickled red onion.
  • Add crispy chickpeas, pepitas, or sunflower seeds for a crunch!
  • Top it off with feta cheese (contains dairy). 
  • Substitute microgreens for kale, spinach, spring mix, or other greens.
  • Add sliced or diced green bell pepper.
