Sloppy Portobellos

Ingredients
  

  • 1 lb ground turkey or beef
  • 4 portobello mushroom caps
  • 1 red bell pepper
  • 1 cup chopped celery
  • 1 cup shredded carrots
  • 1/4 cup chopped green onion
  • 7 oz tomato paste
  • 1/2 cup chicken bone broth
  • 1/4 cup coconut aminos
  • 2 tbsp apple cider vinegar
  • 1 tsp chili powder
  • 2 tsp avocado oil
  • 1 tsp garlic chive powder or garlic powder
  • 1 tsp ground mustard
  • 1/4 cup water
  • fresh chives
  • jalapeño slices
  • avocado slices
  • fresh cilantro
  • fresh lime
  • salt

Equipment

  • 1 8x8in glass baking dish
  • 1 chef's knife
  • 1 cutting board
  • 1 fry pan/skillet
  • 1 meat masher
  • 1 spoon
  • measuring cups
  • measuring spoons

Preparation
 

  1. Preheat the oven to 350F.
  2. Spray a pan with oil. Turn the stove to medium-high heat, add ground meat, avocado oil, and chili powder. Mash and cook until the meat is browned.
  3. Lower the heat then add celery, green onion, bell pepper, carrots, and coconut aminos. Cook until the veggies begin to soften.
  4. Add chicken bone broth, tomato paste, apple cider vinegar, garlic chive/garlic powder, ground mustard, and water. Mash and combine everything.
  5. Hollow out portobello caps with a spoon. Add some of the sloppy joe mix to the center of each.
  6. Slice fresh jalapeño and add on top if desired.
  7. Bake for ~20 minutes.
  8. Sprinkle on fresh cilantro, add sliced avocado, and squeeze on fresh lime.

Substitutions, Add-Ons, & Alterations:
  • Try this with any ground meat such as chicken or tofu (contains soy). 
  • Substitute chicken bone broth for beef bone broth or vegetable broth.
  • Replace coconut aminos (contains coconut) with soy sauce (contains gluten).
  • Use any of your favorite vegetables. Try zucchini, summer squash, eggplant, chopped spinach, broccoli, etc.
