- Preheat the oven to 425F.
- Wash and cut the potatoes into fourths.
- Add water, vinegar, and salt to a pot. Bring to a boil.
- Add potatoes and cook for ~10 minutes, then bring to a simmer and cook until tender (~15-20 minutes).
- Drain the potatoes and toss them in 1 tbsp avocado oil.
- Roast the potatoes for 30-45 minutes, tossing halfway.
