These Salt and Vinegar Golden Potatoes are irresistible! Pair these with your next meal for a tasty side.

Ingredients
  

  • 1 lb 8 oz baby golden potatoes
  • 1 cup apple cider vinegar
  • 1 tbsp avocado oil
  • 1 tbsp salt
  • 2 cups water

Equipment

  • 1 large pot
  • 1 strainer/colander
  • 1 baking sheet pan
  • 1 chef's knife
  • 1 cutting board

Preparation
 

  1. Preheat the oven to 425F.
  2. Wash and cut the potatoes into fourths.
  3. Add water, vinegar, and salt to a pot. Bring to a boil.
  4. Add potatoes and cook for ~10 minutes, then bring to a simmer and cook until tender (~15-20 minutes).
  5. Drain the potatoes and toss them in 1 tbsp avocado oil.
  6. Roast the potatoes for 30-45 minutes, tossing halfway.
