Grain bowls are an easy way to build a balanced, flavorful meal! This Roasted Rainbow Grain Bowl combines a variety of colorful veggies, making it antioxidant and nutrient rich.

Preparation
- Prepare the chicken breast as preferred.
- Prepare the sweet potatoes as preferred, air-fry or roast, seasoned to your liking.
- Cook the wild rice as preferred. Use water and/or bone broth for a protein and nutrient boost!
- Wash and prep the mushrooms. Toss them with oil, salt, and pepper. Air-fry them at 400F for 15 minutes.
- Wash and slice the tomatoes.
- Wash and tear or chop the spring mix. Add it to the bowl.
- Add the wild rice, roasted sweet potato, air-fried mushrooms, sliced tomatoes, pickled vegetables, and cooked chicken breast to the bowl.
- Squeeze in fresh lemon juice. Drizzle on tahini or favorite dressing.
Notes
Substitutions, Add-Ons, & Alterations:
- Use brown rice, quinoa, black jasmine rice, or any other favorite grain (may contain gluten) in place of wild rice.
- Substitute roasted sweet potato for roasted potatoes or butternut squash.
- Add any of your favorite veggies or fruit. Try roasted zucchini, sliced apples, blueberries, pomegranate, shredded carrots, fresh or roasted cauliflower, or fresh or roasted broccoli.
- Sprinkle on pepitas, sunflower seeds, air-dried edamame (contains soy), or crispy chickpeas for a crunch.
