Preparation
- Preheat the oven to 350F.
- Wash the tomatillos, remove their stems, and roast them for 20 minutes, flipping halfway.
- Add the roasted tomatillos, serrano pepper, green onion, cilantro, and salt to a blender. Squeeze in fresh lime juice.
- Blend until smooth. Add water to thin, 1 tbsp at a time until desired consistency is reached.

Substitutions, Add-Ons, & Alterations:
- Add avocado, yogurt (contains dairy), or sour cream (contains dairy) for creaminess.
- Use jalapeño instead of serrano pepper to make it spicy.
- Use regular onion or a shallot in place of green onion for a stronger taste.
