Herby Roasted Potato Wedges

Potatoes are the perfect side dish that pair well with nearly any entrée! These Herby Roasted Potatoes Wedges are a flavorful and easy way to prepare and enjoy your potatoes.

Ingredients
  

  • 3 lbs yellow potatoes
  • 1/4 cup avocado oil
  • 1 tbsp dried oregano
  • 1 tbsp dried basil
  • 1 tbsp dried sage
  • 1 tbsp ground thyme
  • 1 tbsp garlic or garlic chive powder
  • 1 tsp paprika
  • 1 tsp salt

Equipment

  • 1 large mixing bowl
  • 1 chef's knife
  • 1 cutting board
  • measuring cups
  • measuring spoons

Preparation
 

  1. Preheat the oven to 350F.
  2. Wash the potatoes, then cut them into wedges.
  3. Add the potato wedges to a large mixing bowl, then add in all of the other ingredients.
  4. Toss the potatoes until each wedge is completely coated in the oil and herbs.
  5. Lay each wedge flat onto a baking pan.
  6. Roast the potato wedges for 1 hr 5 min, flipping halfway.

Substitutions, Add-Ons, & Alterations:
  • Replace yellow potatoes with any other potato variety.
  • Try this recipe with other root veggies (carrots, beets, parsnips, radishes, etc.)
  • Use any of your favorite herbs and spices.
  • Cut the potatoes any way you’d like. You can cut them into cubes, thin slices, planks, or French fries.
