Giardinera Pasta

Pickled veggies meet pasta for this Giardinera Pasta! It's salty, saucy, and savory.

Ingredients
  

  • 8 oz shell pasta noodles gf
  • 1 lb ground turkey or beef
  • 24 oz mild giardinera
  • 32 oz marinara sauce
  • fresh spinach
  • 1 bunch green onion
  • fresh oregano
  • fresh thyme
  • green onion powder or onion powder
  • garlic chive powder or garlic powder
  • paprika

Equipment

  • 1 large pot
  • 1 strainer/colander
  • 1 chef's knife
  • 1 cutting board
  • 1 sauté pan or skillet
  • 1 meat masher
  • 1 wooden mixing spoon

Preparation
 

  1. Prepare the pasta noodles as the package instructs. Drain and rinse the noodles once they are cooked.
  2. Heat a large pan on the stove. Add the ground meat, along with paprika, garlic chive/garlic powder, and green onion/onion powder. Mash and cook the meat over a medium-high heat.
  3. Once the meat is half cooked, add the giardinera, including brine. Mash the giardinera and combine with the meat.
  4. Chop the green onion and add it to the pan. Tear or chop and add spinach as desired. Pour in marinara sauce. Combine the ingredients together.
  5. Mince oregano and thyme, then add to the pan. Combine everything together.
  6. Add some of the noodles and some of the sauce mix to a bowl upon serving.

Substitutions, Add-Ons, & Alterations:
  • Use any ground meat you prefer. Try ground chicken or ground tofu (contains soy). 
  • Substitute green onion for red, yellow, or white onion or shallots.
  • Try this with any of your favorite pasta shapes!
