Dark Chocolate Pomegranate Bark

Pomegranate is a versatile fruit that makes a delicious add-on to nearly any recipe, sweet or savory! Use it to top off this sweet chocolate treat that comes together in just a few minutes.

Ingredients
  

  • 1 cup dark chocolate chips allergen free
  • nut or seed butter
  • pepitas
  • pomegranate seeds
  • shredded coconut

Equipment

  • 1 cutting board or flat surface
  • 1 microwave-safe dish
  • parchment paper
  • measuring cups

Preparation
 

  1. Cover a cutting board or flat surface with parchment paper.
  2. Add the chocolate chips to a microwave-safe dish. Microwave them for 1 minute, stir, and then microwave for another 15-30 seconds, if needed.
  3. Smear the chocolate onto parchment paper and spread it evenly, nearly covering the surface.
  4. Add seed or nut butter on top. Use a toothpick to swirl it.
  5. Sprinkle on the pepitas, then the pomegranate seeds and shredded coconut.
  6. Freeze the bark for 2-3 hours.
  7. Break it apart into pieces. Store in the freezer.

Notes

Substitutions, Add-Ons, & Alterations:
  • Add raspberries, blueberries, chopped dates, or other berries on top.
  • Substitute the pepitas for sunflower seeds or crushed nuts (contains peanuts and/or tree nuts).
  • Omit the shredded coconut (contains coconut).
  • Sprinkle cinnamon on top or drizzle on honey.
  • Add cacao nibs or chia seeds.
