Chocolate Chip Chickpea Cookies

Who would've thought chickpeas could be made into a chocolate chip cookie? These Chocolate Chip Chickpea Cookies are a fun and sweet way to use up your chickpeas. These cookies use only a few ingredients and can be made entirely allergen free!

Ingredients
  

  • 15 oz chickpeas
  • 1/2 cup chickpea flour
  • 1/2 cup nut or seed butter
  • 1/4 cup maple syrup
  • 1/4 tsp baking soda
  • 1/2 tsp cream of tartar
  • 1/3 cup (allergen free) chocolate chips + more for topping

Equipment

  • 1 large baking sheet pan
  • 1 cookie scoop or spoon
  • 1 food processor
  • parchment paper
  • measuring cups
  • measuring spoons

Preparation
 

  1. Preheat the oven to 350F.
  2. Prepare the chickpeas as the can/package instructs.
  3. Add the chickpeas to a food processor and blend/pulse.
  4. Add all of the other ingredients (except the chocolate chips) to the food processor and blend/pulse them together.
  5. Add and fold in the chocolate chips.
  6. Line a baking sheet pan with parchment paper and spray it with oil.
  7. Use a cookie scoop or spoon to gather a small amount of the dough.
  8. Press each piece of dough into a cookie shape on the baking pan (the cookies do not rise/spread on their own).
  9. Add more chocolate chips on top if desired.
  10. Bake the cookies for 15-18 minutes.
  11. Let the cookies cool and sprinkle sea salt on top.

Substitutions, Add-Ons, & Alterations:
  • Substitute maple syrup for honey. 
  • Use oat flour (contains oat, may contain gluten), almond flour (contains tree nuts), or sorghum flour in place of chickpea flour. 
  • Add a sprinkle of cinnamon.
