Sweet Citrus Loaf

If you're looking for a quick and easy baking recipe, you've got to try out this Sweet Citrus Loaf! With lemon and orange zest and a toasted coconut topping, it's a flavor combo that can't be beat.

Ingredients
  

  • 1 3/4 cup all-purpose flour gf
  • 4 overripe bananas
  • 1/4 cup ground flaxseeds
  • 2 tbsp poppyseeds
  • 1 tbsp baking soda
  • 2 tbsp maple syrup
  • 2 tsp avocado oil
  • 1 orange
  • 1 lemon
  • coconut shreds

Equipment

  • 1 8x4in baking pan
  • 1 large mixing bowl
  • 1 microplane
  • 1 meat masher or fork
  • 1 spoon or whisk for mixing
  • measuring cups
  • measuring spoons

Preparation
 

  1. Preheat the oven to 375F.
  2. Add the bananas to a large bowl and mash them with a meat masher or fork.
  3. Add the flour, baking soda, maple syrup, ground flaxseeds, avocado oil, and poppyseeds to the bowl. Mix everything together.
  4. Zest the lemon and orange. Add the zest to the bowl and mix with the other ingredients.
  5. Squeeze in juice from 1/2 lemon and 1/2 orange. Mix everything together again.
  6. Spray an 8x4in baking pan with avocado oil. Add the bread mix to the pan.
  7. Sprinkle coconut shreds on top before baking.
  8. Bake for ~30-40 minutes, let cool, slice, and serve.

Substitutions, Add-Ons, & Alterations:
  • Use all orange or all lemon.
  • Omit coconut shred (contains coconut) topping. 
  • Add blueberries to the mix before baking. 
  • Top with icing or glaze (may contain gluten and/or dairy).
