- Preheat the oven to 375F.
- Add the bananas to a large bowl and mash them with a meat masher or fork.
- Add the flour, baking soda, maple syrup, ground flaxseeds, avocado oil, and poppyseeds to the bowl. Mix everything together.
- Zest the lemon and orange. Add the zest to the bowl and mix with the other ingredients.
- Squeeze in juice from 1/2 lemon and 1/2 orange. Mix everything together again.
- Spray an 8x4in baking pan with avocado oil. Add the bread mix to the pan.
- Sprinkle coconut shreds on top before baking.
- Bake for ~30-40 minutes, let cool, slice, and serve.
