Strawberry Vanilla Protein Bites

These Strawberry Vanilla Protein Bites make for the perfect protein-packed afternoon snack! You'll get a boost of energy with a burst of flavor.

Ingredients
  

  • 3/4 cup freeze-dried strawberries
  • 1/2 cup sorghum flour
  • 1/4 cup ground flax seed
  • 1/3 cup vanilla protein powder
  • 1/3 cup nut or seed butter
  • 3 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1-3 tbsp water start with less, add more as needed

Equipment

  • 1 food processor
  • 1 microwave-safe dish
  • measuring cups
  • measuring spoons

Preparation
 

  1. Add the freeze-dried strawberries, sorghum flour, ground flax seed, vanilla protein powder, maple syrup, and vanilla extract to a food processor.
  2. Add the nut or seed butter to a microwave-safe dish. Microwave it for 50 seconds then add it to the food processor and pulse/grind the ingredients together.
  3. Add the water, 1 tbsp at a time until the mix can be shaped into bites.
  4. Take a small spoonful of the mixture and roll it into a bite.
  5. Place each protein bite into a dish or container and refrigerate them for ~1-2 hours to solidify.

Notes

Substitutions, Add-Ons, & Alterations:
  • Substitute sorghum flour for any flour variety (may contain gluten, oat, corn, tree nuts).
  • Use ground chia seeds in place of ground flax seeds. 
  • Try honey in place of maple syrup.
  • Omit vanilla extract.
  • Drizzle on melted chocolate or roll in dried coconut.
