Hamburger Pasta Salad

It's the hamburger you know & love, but made into a pasta salad! This dish is easy to make, made with fresh flavors, & packed with good nutrition.

Ingredients
  

  • 8 oz rotini pasta gf
  • 1 lb ground beef or turkey
  • 4 oz microgreens
  • 1 cup chopped pickles
  • 1 bunch chopped green onion
  • 1 cup diced tomato
  • seasonings of choice
  • favorite mustard or ranch-based dressing

Equipment

  • 1 large pot
  • 1 strainer/colander
  • 1 chef's knife
  • 1 cutting board
  • 1 baking sheet pan
  • 1 large mixing bowl
  • measuring cups

Preparation
 

  1. Preheat the oven to 400F.
  2. Season the ground turkey as preferred. Line a baking sheet pan with parchment paper. Roll the turkey into small "meatballs" and set on the pan. Bake them for ~25 minutes, flipping halfway.
  3. Chop the green onion, pickles, and tomatoes. Prepare the pasta as the package/box instructs.
  4. Add the pasta, microgreens, chopped green onion, pickles, tomatoes, and "mini meatballs" to a large mixing bowl.
  5. Drizzle on your favorite dressing and toss everything together.

Substitutions, Add-Ons, & Alterations:
  • Replace ground turkey with ground beef or ground chicken.
  • Use any pasta shape you’d like.
  • Substitute green onion for red, white, or yellow onion or pickled onion.
  • Try chopped spinach, lettuce, kale, or other greens instead of microgreens.
