Grapefruit and Radish Summer Salad

This Grapefruit & Radish Salad with Salmon is refreshing, colorful, & extra easy to prepare! It's the perfect salad to make this season.

Ingredients
  

  • 1 lb salmon
  • 5 oz arugula
  • 1 large grapefruit
  • 6 small radishes
  • 1 medium avocado
  • 1/3 cup sunflower seeds
  • dressing of choice

Equipment

  • 1 large mixing bowl
  • 1 chef's knife
  • 1 cutting board
  • measuring cups

Preparation
 

  1. Prepare the salmon as preferred.
  2. Cut the grapefruit, radishes, and avocado. Wash the arugula.
  3. Shred the salmon with a fork.
  4. Add the salmon, arugula, radishes, grapefruit, avocado, and sunflower seeds to a large mixing bowl.
  5. Add the dressing and toss everything together.

Substitutions, Add-Ons, & Alterations:
  • Substitute salmon for chicken, tofu (contains soy), steak, or other protein.
  • Use celery, cauliflower, or carrots in place of radishes. 
  • Try orange slices instead of grapefruit. 
  • Instead of sunflower seeds, use cashews, crispy chickpeas, or other nuts, seeds, etc.
  • Substitute arugula for kale, spinach, collard greens, or other greens.
