Dairy Free Sunflower Seed and Veggie Queso

Everyone deserves to be able to eat queso! This sunflower seed version is dairy free, gluten free, and allergen friendly so anyone can enjoy.

Ingredients
  

  • 2/3 cup sunflower seeds
  • 3/4 cup shredded carrots
  • 1 medium roma tomato
  • 1/4 medium yellow bell pepper
  • 1/3 cup nutritional yeast
  • 1/2 cup milk df
  • 1 tsp ground cumin
  • 1 tsp paprika + more for topping
  • 1/2 tsp chili powder
  • 1/2 tsp cayenne pepper
  • 1 cup water
  • lime wedges
  • sea salt

Equipment

  • 1 blender
  • 1 baking sheet pan
  • 1 chef's knife
  • 1 cutting board
  • measuring cups
  • measuring spoons

Preparation
 

  1. Preheat the oven to 350F.
  2. Slice the bell pepper and roma tomato.
  3. Spray a pan with oil spray. Spray bell pepper and tomato with oil and add a pinch of salt.
  4. Roast the veggies for 25 minutes.
  5. Add all of the ingredients to a blender and blend everything until smooth.

  • Substitute sunflower seeds for cashews (contains tree nuts). 
  • Adjust spices as you prefer. 
  • Use any veggies you prefer. Try onion, summer squash, zucchini, cauliflower, poblano peppers, jalapeños, or any other.
