Crunchy Rainbow Coleslaw

This Crunchy Rainbow Coleslaw has an extra crunch & a touch of sweetness with air-dried edamame, pepitas, & raisins! Try out this easy recipe to add some color to your plate.

Ingredients
  

  • 14 oz tri-colored coleslaw mix
  • 10 oz shredded carrots
  • 1/2 cup air-dried edamame
  • 1/3 cup pepitas
  • 2/3 cup raisins
  • 1 bunch chopped green onion
  • 1 tsp celery seeds
  • 1/4 cup olive oil
  • 1 tbsp stone ground dijon mustard
  • 3 tbsp apple cider vinegar
  • 2 tbsp maple syrup
  • 1 lemon juiced
  • ground black pepper
  • 1/4 tsp salt

Equipment

  • 1 large mixing bowl
  • 1 chef's knife
  • 1 cutting board
  • 1 citrus juicer/press
  • measuring cups
  • measuring spoons

Preparation
 

  1. Chop the green onion.
  2. Measure out each ingredient and add it to the large mixing bowl.
  3. Toss everything together.

Notes

Substitutions, Add-Ons, & Alterations:
  • Replace dried-edamame (contains soy) with crispy chickpeas. 
  • Use sunflower seeds or any crushed nuts (contains tree nuts and/or peanuts) in place of pepitas.
  • Instead of raisins, used craisins, chopped dates, or any other dried fruit.
  • Substitute honey for maple syrup.
