Pumpkin Spice Protein Doughnuts

Ingredients
  

Doughnuts
  • 1/2 cup all-purpose flour gf
  • 1/2 cup pumpkin puree
  • 1/4 cup milk df
  • 1/4 cup maple syrup
  • 2/3 cup vanilla protein powder gf, df
  • 2 tbsp ground flax seeds
  • 2 tbsp coconut sugar
  • 1 tsp avocado oil
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp all spice
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1 pinch tumeric
  • 1/2 cup water
  • oil spray
Glaze
  • 12 cacao butter wafers
  • 2 tsp coconut sugar
  • pepitas as desired
  • ground cinnamon as desired

Equipment

  • 1 doughnut mold silicone works best
  • 1 large mixing bowl
  • 1 microwave-safe dish
  • 1 whisk
  • 1 spoon
  • measuring cups
  • measuring spoons

Preparation
 

  1. Preheat the oven to 350F.
  2. Add all of the doughnut ingredients to a large bowl. Mix together.
  3. Spray a doughnut mold with oil. Add the batter evenly to each mold (should fill 6 sections).
  4. Bake for ~15 minutes, then let the doughnuts cool to room temperature.
  5. Add the cacao butter wafers to a microwave-safe dish. Microwave them for ~1 minute, then stir until completely melted.
  6. Add 2 tsp coconut sugar to the melted cacao butter wafers. Stir together.
  7. Drizzle the glaze on top of each doughnut.
  8. Sprinkle on extra cinnamon and pepitas if desired.
  9. Freeze the doughnuts for ~5 minutes to let the glaze harden.

Substitutions, Add-Ons, & Alterations:
  • Substitute maple syrup for honey.
  • Add crushed pecans (contains tree nuts) or another nut (may contain peanuts and/or tree nuts) or seed on top.
  • Use another granulated sugar in place of coconut sugar (contains coconut).
