Spice up your snacks this week & try out these Pumpkin Spice Protein Bars! They're perfect for a mid Fall day boost.

Preparation
- Add the protein powder, pumpkin puree, puffed millet or rice, sorghum flour, ground flax seed, pumpkin pie spice, and ground cinnamon to a large bowl. Mix everything together.
- Add the nut or seed butter to a microwave-safe dish and microwave for ~1 minute, then stir and add to the large mixing bowl with the other ingredients.
- Add the maple syrup to the bowl then combine all the ingredients.
- Add the mix to a bar mold or square baking dish.
- Refrigerate the bars for 1-2 hours to set, then remove them from the mold or cut into bars. Store in the refrigerator.

Substitutions, Add-Ons, & Alterations:
- Replace the puffed millet/rice with rolled oats (contains oat).
- Use ground chia seed in place of the ground flax seed.
- Instead of maple syrup, use honey.
- Substitute sorghum flour for any other flour such as chickpea flour, teff flour, coconut flour (contains coconut), oat flour (contains oat), almond flour (contains tree nuts), etc.
