Spice up your snacks this week & try out these Pumpkin Spice Protein Bars! They're perfect for a mid Fall day boost.

Ingredients
  

  • 1 cup vanilla protein powder gf, df
  • 1/2 cup pumpkin puree
  • 3/4 cup nut or seed butter
  • 3/4 cup puffed millet or rice
  • 1/4 cup sorghum flour
  • 1/4 cup ground flax seed
  • 1/4 cup maple syrup
  • 1 tsp pumpkin pie spice
  • 1/4 tsp ground cinnamon

Equipment

  • 1 large mixing bowl
  • 1 mixing spoon
  • 1 microwave-safe dish
  • measuring cups
  • measuring spoons

Preparation
 

  1. Add the protein powder, pumpkin puree, puffed millet or rice, sorghum flour, ground flax seed, pumpkin pie spice, and ground cinnamon to a large bowl. Mix everything together.
  2. Add the nut or seed butter to a microwave-safe dish and microwave for ~1 minute, then stir and add to the large mixing bowl with the other ingredients.
  3. Add the maple syrup to the bowl then combine all the ingredients.
  4. Add the mix to a bar mold or square baking dish.
  5. Refrigerate the bars for 1-2 hours to set, then remove them from the mold or cut into bars. Store in the refrigerator.

Notes

Substitutions, Add-Ons, & Alterations:
  • Replace the puffed millet/rice with rolled oats (contains oat).
  • Use ground chia seed in place of the ground flax seed. 
  • Instead of maple syrup, use honey.
  • Substitute sorghum flour for any other flour such as chickpea flour, teff flour, coconut flour (contains coconut), oat flour (contains oat), almond flour (contains tree nuts), etc.
