High Protein Chicken Noodle Soup

Beat the cold weather with this Chicken Noodle Soup! It's packed with protein, veggies, and of course, flavor, keeping you cozy, comforted, and nourished.

Ingredients
  

  • 1 3/4 cups chicken breast shredded
  • 2 cups carrots chopped
  • 2 cups celery chopped
  • 1 bunch green onion
  • 1 cup farfalle/bowtie pasta gf
  • 64 oz chicken bone broth
  • 1 tbsp avocado oil
  • 1/2 tsp salt
  • fresh dill chopped
  • fresh parsley chopped
  • fresh chives chopped
  • oil spray

Equipment

  • 1 large pot
  • 1 colander/strainer
  • 1 chef's knife
  • 1 cutting board
  • measuring cups
  • measuring spoons

Preparation
 

  1. Wash and chop all of the veggies.
  2. Prepare the chicken as preferred, then shred it with a fork.
  3. Prepare the noodles as the box/package instructs.
  4. Place a large pot on the stove. Spray it with oil. Add avocado oil, carrots, celery, green onion, and salt. Cook on low-medium heat until softened.
  5. Once the veggies have softened, add the chicken bone broth, shredded chicken, and fresh herbs. Let everything simmer for a few minutes. Stir together frequently.
  6. Add the cooked noodles and stir.

Substitutions, Add-Ons, & Alterations:
  • Add any of your other favorite veggies. Try peas, mushroom, zucchini, bell peppers, kale, or potatoes.
  • Use any pasta shape you prefer!
  • Replace chicken bone broth with beef bone broth or vegetable broth.
  • Stir in milk (may contain gluten, dairy, tree nuts, or soy) or yogurt (may contain dairy, tree nuts, or soy) for a creamier consistency.
  • Try adding any other herbs or spices. You can use rosemary, oregano, thyme, or bay leaves.
