Chocolate Chip Banana Baked Buckwheat

Ingredients
  

  • 1 1/2 cups buckwheat
  • 2 overripe bananas + 1 more for topping
  • 1/4 cup ground flax seeds
  • 1/4 cup chickpea flour
  • 1/4 cup sunflower seeds
  • 1/3 cup chocolate chips allergen free, + more for topping
  • 1 1/4 cup milk df
  • 1 tsp avocado oil
  • 1 tsp ground cinnamon
  • 1/4 tsp salt

Equipment

  • 1 8x8in baking pan
  • 1 large mixing bowl
  • 1 meat masher or fork
  • 1 whisk or mixing spoon
  • 1 butter knife
  • measuring cups
  • measuring spoons

Preparation
 

  1. Preheat the oven to 375F.
  2. Add the bananas to a large mixing bowl and mash them with a fork.
  3. Add the buckwheat, ground flax seed, chickpea flour, sunflower seeds, chocolate chips, milk, avocado oil, cinnamon, and salt to the bowl. Mix everything together.
  4. Spray an 8x8in baking pan with oil, then add and spread the mix evenly into the pan.
  5. Slice a banana and add it on top. Sprinkle the extra chocolate chips on top.
  6. Bake it for 40-45 minutes, then let it cool before cutting it into bars.
