These Pinwheel Sandwiches are a quick, easy, & fun way to enjoy a sandwich! Swap or substitute fillings as you'd like.

Preparation
- Dab the tortilla with water and microwave for 10 seconds to soften.
- Smear a thin layer of hummus onto one side of the tortilla.
- Add a layer of chicken and spinach. Cover 2/3 of the tortilla, leaving space with just hummus on ~1/3 of the tortilla. Add tomato slices down the middle. Sprinkle on chopped green onion.
- Roll the tortilla into a log then wrap in saran/plastic wrap.
- Refrigerate for at least 1 hr, then remove from plastic wrap and cut into "pinwheels".
Notes
Substitutions, Add-Ons, & Alterations:
- Replace green onion with red, white, or yellow onion or pickled onion.
- Use any of your favorite hummus flavors (contains sesame).
- Substitute chicken breast for turkey breast, ham, or any other protein you prefer.
