You can enjoy this favorite cookie regardless of your dietary restrictions! All you need are 3 ingredients & a few minutes of time.

Preparation
- Cover a cutting board, baking sheet, or other flat surface with parchment paper.
- Add the chocolate chips to the microwave safe dish. Microwave them for ~45 seconds to 1 minute.
- Stir the melted chocolate together until smooth, then add in the peppermint extract, and stir again.
- With a fork, cover each cracker in melted chocolate and place it onto the parchment-covered surface.
- Freeze the crackers for 5-10 minutes.
- Optional: Melt more chocolate and drizzle it on top, then freeze for another 5-10 minutes.

Substitutions, Add-Ons, & Alterations:
- Omit peppermint extract if not preferred.
- Sprinkle cacao nibs on top of the crackers before chocolate hardens.
- Try this with pretzels (may contain gluten, soy, etc.) or any other favorite snack!
