3-Ingredient Thin Mints

You can enjoy this favorite cookie regardless of your dietary restrictions! All you need are 3 ingredients & a few minutes of time.

Ingredients
  

  • 15 cracker rounds gf, allergen-friendly
  • 1/2-3/4 cup dark chocolate chips allergen-friendly
  • 1/8-1/4 tsp peppermint extract

Equipment

  • 1 microwave-safe dish
  • 1 spoon
  • 1 fork
  • 1 cutting board, plate, or flat surface
  • parchment paper

Preparation
 

  1. Cover a cutting board, baking sheet, or other flat surface with parchment paper.
  2. Add the chocolate chips to the microwave safe dish. Microwave them for ~45 seconds to 1 minute.
  3. Stir the melted chocolate together until smooth, then add in the peppermint extract, and stir again.
  4. With a fork, cover each cracker in melted chocolate and place it onto the parchment-covered surface.
  5. Freeze the crackers for 5-10 minutes.
  6. Optional: Melt more chocolate and drizzle it on top, then freeze for another 5-10 minutes.

Substitutions, Add-Ons, & Alterations:
  • Omit peppermint extract if not preferred.
  • Sprinkle cacao nibs on top of the crackers before chocolate hardens.
  • Try this with pretzels (may contain gluten, soy, etc.) or any other favorite snack!
