Preparation
- Place a pan on the stove, spray it with oil, and turn the stove to a medium-high heat. Add the diced steak, paprika, chili powder, ground cumin, and salt to the pan. Cook until the steak is almost cooked through.
- Lower the heat, then add the coconut aminos, tomato paste, and water to the pan. Stir everything together.
- Prepare the tortillas as desired. You can fry them in the pan or heat them over the stove.
- Wash and chop the jalapeño and cilantro.
- In a small bowl, add the avocado and mash it with a fork. Add all of the other ingredients for the avocado topping to the bowl and combine them together.
- Add the microgreens and cooked steak to the tortillas. Top it off with the avocado topping, pickled veggies, and sunflower seeds. Squeeze on more fresh lime upon serving if desired.
