Protein Buckeyes made with just 6 ingredients! These are made using sunflower seed butter, making them both gluten free and allergen friendly.

Ingredients
  

  • 2/3 cup nut or seed butter
  • 1 cup vanilla protein powder gf, df
  • 1/4 cup maple syrup
  • 2 tbsp ground flax seeds
  • 2 tbsp water
  • 3-4 oz cacao wafers or chocolate

Equipment

  • 1 large mixing bowl
  • 1 small microwave-safe dish
  • 1 cutting board, baking pan, or large plate for setting
  • 1 fork
  • parchment paper
  • measuring cups
  • measuring spoons

Preparation
 

  1. Add the protein powder, ground flax seed, and maple syrup to a large bowl. Mix everything together.
  2. Add the nut or seed butter to a microwave-safe dish. Microwave for ~45 seconds. Stir and add the melted nut or seed butter to the bowl with the rest of the ingredients.
  3. Add the water to the bowl and combine all of the ingredients.
  4. Roll the mixture into small balls. Chill them in the refrigerator for ~1 hr.
  5. Set out parchment paper on a cutting board or other flat surface.
  6. Add cacao/chocolate to a microwave-safe dish. Microwave it for ~45 seconds, stir, and microwave for another 30-45 seconds if needed.
  7. Use a fork to help cover each buckeye with chocolate, leaving a space at the top.
  8. Set each chocolate covered buckeye on the parchment paper, then freeze them for 5-10 minutes to let the chocolate/cacao harden.

Substitutions, Add-Ons, & Alterations:
  • Replace sunflower seed butter with any other nut or seed butter (may contain peanuts or tree nuts).
  • Use ground chia seeds instead of ground flax seeds.
  • Substitute maple syrup with honey. 
  • Omit chocolate/cacao for a plain protein bite.
