Ingredients
  

  • 1 lb mini golden potatoes
  • 2 tbsp avocado oil
  • 2 tbsp dried rosemary
  • 1 large lemon zested
  • 1/2 large lemon juiced
  • garlic or garlic chive powder as desired
  • chili powder as desired
  • crushed black pepper as desired
  • salt as desired
  • oil spray

Equipment

  • 1 large pot
  • 1 fork
  • 1 large baking sheet pan
  • 1 wide-bottomed glass
  • 1 microplane
  • measuring spoons

Preparation
 

  1. Add water to a large pot and bring it to a boil.
  2. Wash and add the potatoes, boiling them until tender and able to be piereced with a fork. This should take ~20 minutes.
  3. Preheat the oven to 375F.
  4. Line a baking sheet with parchment paper and spray it with oil.
  5. Add each potato and use the bottom of a wide-bottomed glass to smash each potato flat. Dampen the bottom of the glass each time to prevent sticking. Spread the smashed potatoes out evenly on the pan.
  6. Drizzle 1 tbsp of avocado oil on top of the potatoes, flip them, then drizzle another 1 tbsp of avocado oil onto the other side. Use your hands to coat each potato evenly if needed.
  7. Season each side of the potatoes with garlic or garlic chive powder, chili powder, crushed black pepper, and salt as desired. Zest 1/2 lemon over one side of the potatoes and the other half over the other side. Sprinkle 1 tbsp dried rosemary onto one side of the potatoes and 1 tbsp onto the other. Add crushed black pepper and salt as desired.
  8. Bake the potatoes for 15-20 minutes, flip them, and then bake them for another 15-20 minutes.
  9. Squeeze on fresh lemon juice before serving.
