Preparation
- Add water to a large pot and bring it to a boil.
- Wash and add the potatoes, boiling them until tender and able to be piereced with a fork. This should take ~20 minutes.
- Preheat the oven to 375F.
- Line a baking sheet with parchment paper and spray it with oil.
- Add each potato and use the bottom of a wide-bottomed glass to smash each potato flat. Dampen the bottom of the glass each time to prevent sticking. Spread the smashed potatoes out evenly on the pan.
- Drizzle 1 tbsp of avocado oil on top of the potatoes, flip them, then drizzle another 1 tbsp of avocado oil onto the other side. Use your hands to coat each potato evenly if needed.
- Season each side of the potatoes with garlic or garlic chive powder, chili powder, crushed black pepper, and salt as desired. Zest 1/2 lemon over one side of the potatoes and the other half over the other side. Sprinkle 1 tbsp dried rosemary onto one side of the potatoes and 1 tbsp onto the other. Add crushed black pepper and salt as desired.
- Bake the potatoes for 15-20 minutes, flip them, and then bake them for another 15-20 minutes.
- Squeeze on fresh lemon juice before serving.
